Creole Black-Eyed Peas(Makes 8 Servings) - cooking recipe
Ingredients

1 lb. dried black-eyed peas
6 c. cold water
2 dried hot red peppers
1/2 c. chopped red peppers
1/2 c. chopped green peppers
1/2 c. oleo
1 tsp. salt
1 tsp. pepper
1 small onion, cut in rings
Preparation

Cover peas with water.
Boil 2 minutes.
Let stand 1 hour.
Add red peppers.
Bring to boil and boil for 30 minutes covered until tender.
Add water, as needed.
Stir in chopped red pepper and green peppers and cook longer.
Season with oleo, salt and pepper. Garnish with onions.
