Zucchini Casserole(Serves 6) - cooking recipe
Ingredients

2 lb. zucchini, sliced 3/8-inch thick (7 c.)
1/4 c. chopped onion
1 (10 1/2 oz.) can condensed cream of chicken soup
1 c. dairy sour cream
1 c. shredded carrot
1/4 c. butter or margarine
2 c. herb seasoned stuffing mix (about 1/2 of 8 oz. pkg.)
Preparation

Combine zucchini and onion in 12 x 7 1/2 x 2-inch glass baking dish.
Add 1/4 cup water.
Cover.
Cook in countertop microwave oven, about 15 minutes or until zucchini is tender.
Stir every 3 minutes.
Drain.
