Vermont Cheddar Cheese Bread - cooking recipe

Ingredients
    3 c. milk
    4 tsp. salt
    4 Tbsp. sugar
    4 Tbsp. shortening
    4 c. (1 lb.) good quality aged shredded Vermont cheddar cheese
    1 c. warm water
    4 pkg. dry yeast
    2 eggs (extra large) beaten
    13-14 c. unbleached flour
Preparation
    Combine milk, cheese, salt, sugar and shortening in saucepan. Heat slowly, stir until bubbles appear around edge and cheese is melted.
    Cool to lukewarm.
    Measure water into large bowl, dissolve yeast.
    Add lukewarm mixture to yeast along with eggs and 8 c. flour. Beat until smooth. Add enough remaining flour to make stiff dough.
    Knead until smooth and elastic.
    Place in greased bowl; cover & let rise in warm place until doubled.
    Punch down.
