Mexican Enchiladas - cooking recipe

12 tortillas
1/3 c. salad oil
1-10 oz. can enchilada sauce
cheese sauce
4 tomatoes, peeled and sliced (about 2 c.)
1/2 c. finely chopped onion
Preparation

Fry tortillas in hot salad oil, one at a time, just until softened, about 3 min. each side. Heat enchilada sauce; dip tortillas in sauce. Spoon 1-2 t. cheese sauce on each tortilla; sprinkle with about 2 t. tomato and 2 t. onion; roll up. Place seam side down, in greased 12 x 7 1/2 x 2 in. baking dish. Combine remaining cheese sauce an enchilada sauce; pour over casserole.
Bake in moderate (350\u00b0) oven for 25 min.
(Serves 6.) (Can add chicken or ground beef.)
