Light N Lean Chicken Breast - cooking recipe

Ingredients
    4 chicken breast halves, skinned
    1/2 tsp. pepper, divided
    2 cloves garlic, halved
    1 c. low-sodium chicken broth
    1/2 c. dry white wine
    2/3 c. skim milk
    1 tsp. finely chopped fresh chives
    2 c. hot cooked rice (cooked without salt or fat)
    2 tsp. cornstarch
Preparation
    Coat skillet with cooking spray, heat until hot.
    Add chicken, sprinkle with 1/4 teaspoon pepper.
    Cook until brown on both sides.
    Reduce heat to low, add garlic.
    Cook 10 minutes more, until chicken is done.
    Remove chicken and keep warm.
    Add broth and wine to garlic, bring to a boil over high heat and boil 5 minutes.
    Reduce heat to low.
    Stir cornstarch into milk and slowly add mixture to skillet.
    Sprinkle with remaining 1/4 teaspoon pepper.
    Cook and stir until thickened.
    Return chicken to skillet.
    Spoon sauce over chicken and sprinkle with chives. Simmer 5 minutes.
    Serve with rice.
