Creole Muffins - cooking recipe
Ingredients

1 1/2 qt. pastry flour
4 Tbsp. baking powder
2 Tbsp. salt
3/4 c. sugar
2 1/2 c. corn meal
1 c. eggs, beaten
1 qt. milk
1 1/8 c. melted shortening
1 c. green peppers, chopped
1 1/3 Tbsp. onion, grated
2/3 c. pimiento, chopped
1 1/2 c. grated cheese
Preparation

Sift together flour, baking powder, salt, sugar and corn meal. Combine beaten eggs and milk.
Add to dry ingredients.
Begin to stir.
Add melted shortening, green peppers, onion, pimiento and cheese.
Stir only enough to dampen dry ingredients.
Fill greased muffin pans.
Bake at 400\u00b0 for 20 minutes.
Yields approximately 4 1/2 dozen.
