Scallopini Chicken - cooking recipe

Ingredients
    1/2 c. flour
    1/4 tsp. nutmeg
    salt & pepper
    4 chicken breast, boned & skinned
    2 eggs, lightly beaten
    3/4 c. bread crumbs
    1/4 c. grated Parmesan cheese
    1/3 c. butter, melted
Preparation
    Season flour with nutmeg, salt and pepper.
    Dredge breasts in flour mixture, then in eggs, then bread crumbs and cheese, which have been combined.
    Melt butter in a skillet and brown breasts on both sides.
    Continue cooking for about 5 minutes or until done. Yield: 4 servings.
