Baked Mochi - cooking recipe

Ingredients
    1 box mochiko
    2 c. sugar
    1 tsp. vanilla
    1 tsp. baking powder
    1 (12 oz.) can coconut milk
    2 c. water
    food coloring (optional)
    katakuri (potato starch)
Preparation
    Mix dry ingredients, except potato starch.
    Add water and coconut milk gradually until well mixed.
    Add vanilla and coloring and pour into greased 9 x 13-inch pan.
    Cover with foil and bake in 350\u00b0 oven for 1 hour.
    Do not underbake.
    In fact, overbake. Cool completely.
    Cut into smaller pieces and roll in potato starch.
