Ratatouille - cooking recipe
Ingredients

4 Tbsp. butter
1 medium eggplant, peeled and cubed
1 medium zucchini, cubed
6 medium tomatoes, peeled and cut
1 medium green pepper, cut into strips
1 large onion, chopped
1 garlic clove, crushed
1 Tbsp. parsley
salt and pepper
Preparation

Combine all ingredients, except salt and pepper.
Simmer 20 minutes or until tender, then salt and pepper to taste.
Excellent frozen.
Serves 6.
