Crusty, Crunchy Salmon Croquettes - cooking recipe

Ingredients
    1 c. cornmeal
    1/4 c. flour
    1 tsp. salt
    1/2 tsp. pepper
    2 Tbsp. finely chopped onion or 2 Tbsp. chives
    1/2 c. milk
    1 egg, beaten
    1 (1 lb.) can salmon, well drained
    1 Tbsp. lemon juice
Preparation
    Remove bones and skin
    from salmon and flake with fork. Sprinkle with lemon juice.
    Sift dry ingredients together into mixing bowl.
    Add milk and
    egg
    and
    beat until smooth.
    Fold salmon into this batter
    and
    drop by tablespoons into hot oil and fry until golden brown,
    about
    3
    or 4 minutes.
    Drain on paper towels and serve with ketchup or your favorite sauce.
