Cornbread Salad - cooking recipe
Ingredients

2 pkg. cornbread mix or the equivalent in a homemade recipe, cooked, cooled and crumbled
1 c. chopped onion
1 c. chopped bell pepper
1 c. chopped celery
4 hard-boiled eggs, chopped
2 large tomatoes
1 1/2 c. mayonnaise
salt and pepper
bacon, fried and crumbled (optional)
Preparation

Mix all ingredients as you would a tossed salad.
Sprinkle with crumbled bacon.
Serves 6 to 8.
Recipe can easily be halved. Especially good with a vegetable soup or your favorite pot of beans.
