Freezer Tomato Sauce - cooking recipe

Ingredients
    20 tomatoes, washed, peeled, cored and cut in chunks
    4 large onions, chopped (about 4 c.)
    4 large carrots, peeled and shredded
    1/2 c. fresh parsley, chopped
    3 Tbsp. sugar
    2 Tbsp. salt
    3/4 tsp. pepper
Preparation
    Bring slowly to boil, stirring often. Lower heat and simmer 30 minutes or until thick. Cool slightly. Measure 3 cups at a time into a blender or food processor. Cover and process on high until smooth (about 1 minute). Pour into freezer containers in serving sizes, leaving 1/4-inch headroom.
    Seal, label and freeze.
    Makes 16 cups.
