1 c. chopped fresh rhubarb
1 tsp. baking powder
1/4 tsp. salt
1 (8 oz.) carton strawberry-banana low-fat yogurt
2 Tbsp. vegetable oil
1 egg, lightly beaten
1 Tbsp. sugar
2 c. all-purpose flour, divided
1/4 tsp. baking soda
1/4 c. sugar
1/4 c. unsweetened orange juice
1 tsp. vanilla extract
vegetable cooking spray
Preparation

Combine rhubarb and 2 tablespoons of flour in a small bowl. Toss well and set aside.
