Peppy Lasagna(55 Minutes Cooking Time) - cooking recipe

Ingredients
    3/4 lb. Italian sausage
    1/4 c. finely chopped onion
    1/4 c. finely chopped celery
    1/4 c. finely chopped carrot
    1 (7 1/2 oz.) can tomatoes, cut up
    1 (6 oz.) can tomato paste
    3/4 c. water
    1/2 tsp. salt
    1 tsp. dried oregano leaves, crushed
    12 oz. fresh Ricotta or cream-style cottage cheese (1 1/2 c.)
    1/4 c. grated Parmesan cheese
    2 beaten eggs
    2 Tbsp. snipped parsley
    6 oz. lasagna noodles, cooked and drained
    6 oz. Mozzarella cheese, thinly sliced
Preparation
    Advance Preparation:
    Cook sausage, onion, celery and carrot, until meat is lightly browned.
    Drain off fat.
    Stir in tomatoes, tomato paste, water, salt, oregano and 1/8 teaspoon pepper. Simmer, covered, 15 minutes, stirring occasionally.
