Potato Casserole - cooking recipe

Ingredients
    5 or 6 medium potatoes
    1 medium onion
    1 bell pepper
    1 small jar chopped pimentos
    4 Tbsp. butter
    3 Tbsp. flour
    1 1/2 c. milk
    1 1/2 c. shredded Cheddar cheese
    salt and pepper to taste
    crushed sour cream and onion flavor chips (Lay's thin works well)
Preparation
    Boil and cube potatoes.
    Saute in small amount of oil, pepper and onion.
    Make white sauce with butter, flour and milk and add 1 cup shredded cheese.
    Mix potatoes, sauteed pepper and onion with sauce in a casserole dish; add pimientos, salt and pepper and mix well.
    Sprinkle reserved 1/2 cup cheese and crushed chips over top.
    Bake at 350\u00b0 just until cheese is bubbly.
