Vegetarian Spaghetti Sauce - cooking recipe

Ingredients
    2 c. sliced zucchini
    1/2 c. sliced fresh mushrooms
    1/2 c. chopped green pepper
    1/2 c. chopped onion
    1/2 tsp. garlic powder
    2 Tbsp. olive oil
    1 (14.5 oz.) can peeled tomatoes
    1 (6 oz.) can tomato paste
    1/2 c. water
    1 tsp. salt
    1/2 tsp. pepper
    1 Tbsp. parsley flakes
    1 tsp. oregano
Preparation
    In olive oil, gently saute zucchini, mushrooms, green pepper, onion and garlic powder.
    Add tomatoes, tomato paste, water and additional spices.
    Stir to break up tomatoes.
    Bring the sauce to a boil and continue cooking, uncovered, 20 minutes. Stir occasionally.
    Serve over pasta, veal, chicken or beef.
    Makes 8 servings.
