Tomato And Shrimp Salad - cooking recipe

Ingredients
    4 tomatoes, cut in eighths
    2 1/2 Tbsp. olive oil
    1 Tbsp. lemon juice
    1 Tbsp. minced fresh herbs (parsley, tarragon, chives)
    1 Tbsp. minced green onion
    8 oz. small cooked shrimp, peeled and deveined
    salt
    freshly ground black pepper
    lettuce
    1/3 c. or more toasted wheat germ (optional)
Preparation
    Put tomatoes into a bowl.
    Mix olive oil and lemon juice together; stir in herbs and onions.
    Pour over tomatoes.
    Add shrimp, combining gently.
    Check for seasonings and add salt and pepper as desired.
    Let stand marinate at room temperature for 30 minutes, then chill.
    Serve on lettuce, sprinkle wheat germ on salad.
