Potato Pancakes - cooking recipe

Ingredients
    3 to 4 medium potatoes (approximately 2 c. when grated)
    4 oz. cream cheese
    1 egg
    1/2 to 2/3 c. diced cheese
    pinch of onion soup mix
    1/2 tsp. salt
    pepper to taste
    2 heaping Tbsp. sour cream (approximately)
Preparation
    Mix together cream cheese, egg, cheese and soup mix.
    Grate potatoes into bowl of water.
    Place potatoes (by handfuls) on a clean dish towel and squeeze out water.
    Immediately mix potatoes, cheese mixture, salt and pepper.
    Add about 2 heaping tablespoons sour cream (don't make mixture too moist).
    Fry pancakes in oil in nonstick pan for 3 to 4 minutes on each side.
