Ingredients

2 slices turkey ham or ham, cut into cubes (approximately 4 oz.)
1/2 c. onion, chopped
1/2 c. bell pepper, chopped
2 cloves garlic, chopped
2 bay leaves
2 tsp. thyme
1 tsp. parsley flakes
2 fresh cayenne peppers, chopped, or 1/4 tsp. pepper flakes (optional, but recommended)
1/4 tsp. black pepper
1 (15 oz.) can chicken broth
1 (15 oz.) can tomato sauce
1/2 can water
1 c. rice
1/2 tsp. oil
Preparation

In nonstick 12-inch skillet, heat oil on medium; saute onion and bell pepper for 1 minute.
Add chicken broth, tomato sauce, water, ham, garlic, parsley, thyme and cayenne.
Stir.
Bring to a boil.
Add rice.
Stir.
Add bay leaves on top.
Reduce heat to a simmer, cover and cook for 20 minutes.
Uncover; let sit 5 minutes.
Fluff with a fork and serve.
Makes 2 large servings (352 calories and 4 1/2 grams fat per serving).
