Caramel Apple Salad - cooking recipe

Ingredients
    1/2 c. pineapple juice
    1/2 c. sugar
    1 Tbsp. flour
    2 Tbsp. vinegar
    1 egg, beaten
    8 oz. Cool Whip
    1 c. chopped peanuts, divided
    4 c. diced apples (with skin)
Preparation
    Mix first 5 ingredients over low heat, stirring constantly until it thickens. Cool. Fold apples and 1/2 cup of peanuts into mixture. Fold in Cool Whip and sprinkle remaining peanuts on top. Refrigerate overnight (but good same day too). Makes about 6 servings.
