Chile Rellenos Casserole - cooking recipe

Non-stick cooking spray
3 cans (4-oz. each) whole green chiles, drained
1/2 lb. Monterey Jack cheese
5 large eggs
1/2 c. flour
1/2 c. milk
Preparation

Preheat oven to 350\u00b0.
Spray shallow 2-quart casserole or 12-inch by 8-inch baking dish with non-stick cooking spray. Discard seeds from chiles.
Slice cheese into same number of pieces as there are chiles.
Place 1 slice of cheese in middle of each whole chile.
Arrange stuffed chiles in casserole.
In bowl, whisk eggs, flour, and milk until blended.
Pour egg mixture over stuffed chiles in casserole.
Bake 35 minutes or until top is golden brown and knife inserted in center comes out clean.
Makes 6 servings.
