Green Pea Soup - cooking recipe
Ingredients

1 qt. green peas
hot water
1 sliced onion
2 Tbsp. margarine
1 c. milk
1 pt. hot water
1 Tbsp. flour
1 c. cream
Preparation

Cover the green peas with hot water to which the sliced onion has been added and cook until the peas can be mashed.
Mash the peas and add the one pint of hot water.
Blend the margarine and flour and cook a minute or so with constant stirring, but do not brown.
Add the peas, then the milk and cream.
Season to taste with salt and white pepper and allow to boil up once.
Strain and serve.
Yields 6 to 8 servings.
