Fish Fiesta - cooking recipe
Ingredients

1 lb. fish fillets
1/4 tsp. pepper
1 Tbsp. lime juice
1 tomato, cut into 1/2 inch slices
1 Tbsp. parsley, snipped
1 tsp. salt
1 small onion, thinly sliced
1 Tbsp. vegetable oil
Preparation

If fish fillets are large, cut into 5 or 6 serving pieces. Arrange fish in ungreased square baking dish 8 x 8 x 2-inches. Sprinkle with salt and pepper.
Top with onions and tomato slices. Sprinkle with lime juice, oil and parsley.
Cover and cook in oven at 375\u00b0 for 15 minutes.
Uncover and cook until fish flakes easily with fork, about 15 minutes longer.
Garnish with lime wedges, if desired.
Makes 5 or 6 servings.
