Crunchy Chicken Casserole - cooking recipe

Ingredients
    2 large carrots, sliced, cooked until not quite tender and drained
    8 oz. shredded Cheddar
    1 (10 + oz.) can chicken broth
    4 c. cooked, diced chicken
    1 jar pimento
    1/2 c. butter
    8 oz. herb seasoned stuffing mix
    1/4 c. flour
Preparation
    Melt 1/4 cup butter.
    Stir in 1/4 cup flour.
    Add chicken broth, stirring constantly until mixture thickens.
    Lower heat and add cheese.
    Stir until cheese melts.
    Remove from heat.
    Stir in chicken, carrots and the pimento.
    Spread in shallow 2-quart casserole.
    Preheat oven to 375\u00b0.
    Melt 1/4 cup butter.
    Add seasoned stuffing mix and mix well.
    Spread over chicken mixture. Bake for 30 minutes.
    Serves 8 to 10.
