Eggplant Italian - cooking recipe

Ingredients
    2 large eggplant
    1/4 medium onion, finely chopped
    1 to 2 cloves garlic, minced
    3 Tbsp. olive oil
    4 oz. grated Cheddar cheese
    1 egg
    1/4 c. dried bread crumbs
    salt and pepper to taste
Preparation
    Peel and cut eggplant into pieces; cook until soft.
    Drain and set aside.
    Saute onion in olive oil until soft.
    Add garlic and saute until just before browned.
