Mini Cheesecakes(Club Member: Terah Smith) - cooking recipe

Ingredients
    1 lb. cream cheese
    3/4 c. sugar
    2 eggs
    1 tsp. vanilla
    24 vanilla wafers
    favorite pie filling
Preparation
    With hand mixer, beat cream cheese, sugar, eggs and vanilla until smooth. Put cupcake liners in cupcake pan.
    Put a vanilla wafer in each, flat side down. Put 1 tablespoon cream cheese mixture in each. Bake 15 minutes at 375\u00b0. Do not overbake or cakes will dry out. Cool cakes.
    Remove from paper cups and top with 1 teaspoon pie filling.
    Top with whipped cream. Keep refrigerated. Makes 24.
