Oatmeal Muffins - cooking recipe
Ingredients

2 c. Quick Quaker oats
2 c. buttermilk
1 c. raisins
1 c. brown sugar
2 eggs
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. corn oil (add last)
2 c. flour
1 tsp. soda
2 tsp. baking powder
Preparation

Combine the oats and buttermilk to soften for 1/2 hour.
Mix slightly beaten eggs with oatmeal and buttermilk after softening. Add to dry ingredients.
Add oil last.
Bake in greased muffin pans for 15 minutes at 400\u00b0.
Dough will keep in refrigerator for 5 weeks.
(Bake a little longer if taken from refrigerator.)
