Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1/2 tsp. lemon pepper
1 tsp. salt
2 Tbsp. oleo
1 egg, beaten
2 Tbsp. minced onions
4 to 6 crackers, crushed
1 Tbsp. Parmesan cheese
1 c. grated mild Cheddar cheese
Preparation
-
Peel eggplant; cook in small amount of water until tender. Drain.
Mash with potato masher.
Add other ingredients and top with grated cheese.
