Ingredients

2 c. whipped topping
3/4 c. sugar
1 1/2 c. frozen strawberries, thawed and drained (reserve juice)
1 1/2 Tbsp. unflavored gelatin
4 Tbsp. juice from berries, heated
1 c. cooked Texmats rice
1 (9-inch) baked pie shell
Preparation

Beat cream cheese and sugar until light and fluffy. Meanwhile, dissolve gelatin in heated strawberry juice.
Gently stir strawberries into cream cheese mixture and add dissolved gelatin.
Stir rice.
Fold in whipped topping.
Turn into pie shell and chill at least 2 hours.
