Gumbo - cooking recipe
Ingredients

1 large chicken
2 qt. water
1 large onion
salt and pepper
thyme
1 lb. okra
1 can tomatoes
crabmeat (optional)
shrimp (optional)
sausage (optional)
Preparation

Boil 4 to 6 large chicken pieces until chicken falls off bones. Use the 2 quarts water to boil chicken in.
Cut up onion and place in with chicken.
Season with salt, pepper and 1 sprig of thyme. Add okra, cut in cubes.
Add tomatoes.
At this point you can add shrimp, crab or sausage or leave it with just the chicken.
Boil slowly for 3 hours.
To be eaten with rice.
