Sweet Potato Muffins - cooking recipe

Ingredients
    1/2 c. butter
    1 1/4 c. sugar
    2 eggs
    1 1/4 c. sweet potatoes, mashed
    1 1/2 c. all-purpose flour
    2 tsp. baking powder
    2 tsp. salt
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1 c. milk
    1/4 c. chopped pecans
    raisins
Preparation
    Preheat oven to 400\u00b0.
    Grease muffin pan.
    Cream butter, sugar and eggs; mix well.
    Blend in sweet potatoes.
    Sift flour, baking powder, salt and spices.
    Add to other mixture alternating with milk.
    Do not overmix.
    Fold in nuts and raisins.
    Fill tins 1/2 full.
    Bake 25 minutes.
    Batter can be made ahead and refrigerated for 3 or 4 days.
