Stuffed Zucchini - cooking recipe

Ingredients
    2 medium zucchini
    3 c. soft bread crumbs
    1/2 c. regular grated cheese
    1 tsp. salt
    1/8 tsp. pepper
    2 beaten eggs
    2 Tbsp. butter
    1 small minced onion
Preparation
    Cut ends off the zucchini.
    Cut zucchini lengthwise.
    Do not pare the zucchini.
    Scoop out pulp.
    Cook (boil) pulp, bread crumbs, salt, pepper, onion and eggs for 5 minutes.
    Spoon into zucchini shells.
    Dot with butter.
    Sprinkle on cheese.
    Bake at 350\u00b0 for 30 minutes.
