White Potato Pie - cooking recipe

Ingredients
    4 medium white potatoes (baking type best)
    4 eggs
    3/4 c. evaporated milk
    1/4 tsp. baking powder
    1 stick butter
    1/4 tsp. lemon flavoring
    1 Tbsp. plus 1 tsp. vanilla flavoring or to taste
    sugar to taste
    pinch of salt
    2 unbaked (9-inch) pie shells
    grated coconut
Preparation
    Peel and quarter the white potatoes; boil them until tender. Put cooked potatoes in a large bowl.
    Mash potatoes until smooth, then mix them with butter, sugar, salt, lemon and vanilla.
    Add eggs, milk and baking powder; beat until smooth.
    Add more sugar, if desired.
    Pour mixture into pie crust shells and sprinkle lightly with grated coconut.
    Bake in a preheated 350\u00b0 oven until done.
