Cheesy Chicken Fajitas - cooking recipe

Ingredients
    1/2 c. red, green and/or yellow pepper strips
    1/4 c. sliced red onion
    1 boneless, skinless chicken breast half, cut into strips
    1 Tbsp. chopped green chilies, drained
    1/8 tsp. ground cumin
    1/2 small clove garlic, minced
    2 flour tortillas (6-inch)
    4 slices cheese
    salsa
Preparation
    Spray a large skillet with no-stick cooking spray.
    Add pepper and onion.
    Cook and stir until tender.
    Remove from skillet. Spray skillet with no-stick cooking spray.
    Add chicken.
    Cook and stir until cooked through.
    Add cooked vegetables, chilies, cumin and garlic; simmer 5 minutes.
    Place each tortilla on microwavable plate.
    Top with 2 cheese slices.
    Microwave each tortilla on High 20 seconds.
    Top each tortilla with half of chicken mixture.
    Fold sides to middle.
    Serve with salsa.
    Makes 2 servings.
