Cheese Stuffed Rice Balls - cooking recipe

Ingredients
    3 eggs
    2 1/2 c. cooked rice
    1/3 c. butter, melted
    2/3 c. grated Parmesan or Romano cheese
    1/4 c. fresh parsley, minced
    1/2 tsp. salt
    1/4 tsp. pepper
    2 oz. Mozzarella cheese, cut into 3/8-inch cubes
    1 c. dry bread crumbs
    oil (for deep-frying)
Preparation
    In a bowl, lightly beat 2 eggs. Stir in the rice, butter, Parmesan cheese, parsley, salt and pepper. Cover and refrigerate for 20 minutes. Roll into 1 1/2-inch balls. Press Mozzarella cube into each; reshape balls.
