Eggplant Northern Italian Style(Serves 4) - cooking recipe
Ingredients

4 baby eggplants
1 large clove garlic, minced
1 tomato
1/4 c. Mozzarella, diced
1 Tbsp. parsley
1/8 tsp. oregano
1 c. marinara sauce
salt and pepper to taste
Preparation

Halve eggplants lengthwise.
Crisscross meaty part with sharp knife.
Place in large skillet.
Add water to half depth, bring to boil.
Cover and simmer 10 to 15 minutes or until tender enough to pierce with fork.
Remove from pan and drain.
Saute garlic until golden.
Dice tomato and combine with garlic, cheese, parsley and oregano.
Pour sauce in large baking dish.
Sprinkle eggplant with salt and pepper and place skin side down in sauce.
Top with cheese mixture.
Bake at 375\u00b0 for 25 minutes.
