Candied Grapefruit Peel - cooking recipe

10 oz. peel
1 1/2 c. water
2 c. white sugar
1/2 tsp. salt
Preparation

Cut the peeling into strips and cover with cold water. Parboil, changing the water often, until the peel is tender and not bitter. Drain. Place 1 1/2 cups water, sugar and salt in a pan with the peel. Cook until the syrup is absorbed. Roll in granulated sugar and let dry before putting into a tin.
