Red Beans And Rice(Preparation Time: 10 Minutes And Cooking Time: 20 Minutes) - cooking recipe

Ingredients
    vegetable cooking spray
    6 oz. low-fat smoked sausage, sliced
    1 c. chopped onion
    3/4 c. chopped green pepper
    1 clove garlic, minced
    3 (16 oz.) cans red beans, drained
    1 (14 1/2 oz.) can no-salt-added stewed tomatoes, chopped (undrained)
    1 1/2 c. water
    1 (6 oz.) can no-salt-added tomato paste
    1/4 tsp. dried oregano
    1/4 tsp. dried thyme
    1/4 tsp. hot sauce
    1 bay leaf
    4 c. cooked long grain rice, cooked without salt or fat
Preparation
    Coat a Dutch oven with cooking spray over medium-high heat unti hot.
    Add sausage and next 3 ingredients.
    Saute until tender.
    Add beans and next 7 ingredients.
    Bring to a boil. Cover, reduce heat and simmer 20 minutes or until thoroughly heated.
    Remove and discard bay leaf.
    Serve over rice.
    Garnish with thyme sprigs, if desired.
    Yields 8 servings.
