Lou Abate'S Pizza Dough(Low-Fat) - cooking recipe

Ingredients
    1 pkg. active dry yeast
    2/3 c. warm water (about 110~)
    2 tsp. sugar
    1/2 tsp. salt
    3 Tbsp. olive oil
    1 1/3 c. plus 1/2 c. unbleached flour
Preparation
    In a large bowl, dissolve the yeast in the water.
    Let stand for 5 minutes to soften.
    Add the sugar, salt and olive oil.
    Let stand for 1 minute.
    Add the 1 1/3 cups of flour and mix to blend until dough is elastic.
    Stir in 1/2 cup more flour to make the dough soft.
    Knead on a floured surface for 10 to 12 minutes or until the dough is smooth and springy.
    Place in a greased bowl, turn the dough to grease the top.
    Cover and place in a warm place until it rises to double its size (about 1 hour).
    Punch the dough down, knead for 3 to 5 minutes, cover and let rise for another hour.
