Mexican Pork Stew - cooking recipe
Ingredients

1 lb. pork tenderloin, cut in 1-inch cubes
1 tsp. salad oil
1 large onion, coarsely chopped
1 tsp. minced garlic
1 can (14 1/2 or 16 oz.) tomatoes, chopped
1 green pepper, coarsely chopped
2 Tbsp. chopped parsley
1/2 tsp. cumin
1/2 tsp. oregano
1/4 tsp. thyme
salt and pepper to taste
Preparation

Brown pork cubes in salad oil.
Add onion and garlic and cook 2 minutes.
Stir in remaining ingredients, bring to a boil and simmer 15 minutes.
Makes 4 servings, 235 calories each.
