Magnificent Stuffed Eggplant - cooking recipe
Ingredients

2 large eggplants, halved lengthwise
2 medium size onions, diced
3 medium size green peppers, diced
3 to 4 Tbsp. bacon drippings or vegetable oil
8 ripe tomatoes, peeled and chunked
salt and pepper to taste
8 oz. Cheddar cheese, grated
1/2 to 3/4 c. bread crumbs
Preparation

Carefully scoop out the eggplant from the skin, taking care not to puncture what should be a thin shell, less than a quarter of an inch thick.
Place the eggplant pieces in salted boiling water to cover and cook until very tender.
