Lamb And Veggie Kebabs - cooking recipe

Ingredients
    5 Tbsp. olive or vegetable oil
    juice of 1 lemon (about 1/3 c.)
    1 Tbsp. chopped fresh parsley
    1 1/4 tsp. dried oregano
    1/2 tsp. salt
    1/4 tsp. pepper
    1 lb. leg of lamb, cut into 2-inch cubes
    1 yellow squash, halved lengthwise and cut into chunks
    1 zucchini
    1 pt. cherry tomatoes
Preparation
    In large bowl, combine oil, lemon juice, parsley, oregano, salt and pepper.
    Add lamb cubes; turn to coat in marinade. Cover.
    Refrigerate 2 hours or overnight.
