Ingredients

1 1/2 c. sugar
2 tsp. cornstarch
2 c. milk
1 c. coconut
3 egg yolks (reserve whites for meringue)
1/2 tsp. vanilla
1 tsp. vanilla (for meringue)
1/3 c. sugar (for meringue)
Preparation

Mix 1 1/2 cups sugar and cornstarch.
Add milk, 1/2 teaspoon vanilla and eggs.
Cook on low heat until thick.
Add coconut and mix well.
Pour into baked pie shells.
Cool.
