2 c. cooked butternut squash
2 large eggs
1/2 c. skim milk
2 Tbsp. plus 2 tsp. reduced calorie margarine
2 Tbsp. coconut
1 tsp. vanilla
2 Tbsp. sugar (not with aspertame)
Preparation

Pour into a casserole dish.
Bake at 350\u00b0 for 50 to 60 minutes.
