Eggs Fantastic - cooking recipe

Ingredients
    1 (12 oz.) pkg. sausage
    1/4 lb. fresh mushrooms, sliced
    1 medium onion, chopped
    salt and pepper to taste
    6 eggs
    3 Tbsp. sour cream
    1/4 to 1/3 c. Mexican chili sauce
    8 oz. Velveeta cheese, sliced
    8 oz. medium Cheddar cheese, sliced
    8 oz. Mozzarella cheese, sliced
Preparation
    Saute crumbled sausage, mushrooms, onions, salt and pepper. Drain well on paper towels. Combine eggs and sour cream in blender for 1 minute. Pour eggs in greased 7 1/2 x 11 1/2-inch baking dish. Bake at 400\u00b0 for 8 to 10 minutes until set in middle. Spoon hot sauce over eggs and add sausage mixture. Layer the 3 cheeses, beginning with the Velveeta. Casserole may be refrigerated or frozen at this point and baked later. Bake, uncovered, at 300\u00b0 for 45 minutes. Remove from the oven and let set for 5 to 10 minutes before cutting and serving. Serves 6 to 8.
