Fat-Free Banana Crunch Muffins - cooking recipe
Ingredients

1 c. all-purpose flour
1/2 c. wheat and barley cereal nuggets
1/2 c. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 medium size bananas, mashed (about 1 c.)
1/2 c. plain nonfat yogurt
1/4 c. thawed frozen no cholesterol egg substitute
1/2 tsp. vanilla
Preparation

Spray mini muffin pan cups with Pam.
Mix the first 6 ingredients in a medium bowl with a wire whisk.
Mix bananas, yogurt, egg substitute and vanilla well.
Stir the flour mixture into the banana mixture until well moistened.
