Manicotti Florentine - cooking recipe

Ingredients
    1/2 c. onion, chopped
    1 garlic clove, minced
    1 Tbsp. butter
    2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
    1 lb. Ricotta cheese
    4 oz. Mozzarella cheese, shredded
    1/2 c. Parmesan cheese
    3 eggs, slightly beaten
    1 Tbsp. lemon juice
    1 tsp. salt
    dash of pepper
    12 large manicotti noodles, cooked and drained
    1 (16 oz.) jar spaghetti sauce
Preparation
    Saute onion and garlic in butter until tender.
    Combine sauteed vegetables, spinach, cheeses, eggs, lemon juice, salt and pepper; mix well.
    Fill noodles with spinach mixture, place in 13 x 9-inch baking dish.
    Cover; bake at 350\u00b0 for 40 minutes.
    Heat sauce; pour over noodles.
    Sprinkle with additional Parmesan cheese, if desired.
