Chicken Chianti - cooking recipe

Ingredients
    1 pkg. boneless chicken thighs (6)
    2 Tbsp. olive oil
    8 oz. sliced crimini or white mushrooms
    3 Tbsp. unbleached flour
    1 c. chopped onion
    1/2 c. chopped carrot
    1 c. Chianti or other red wine
    1 c. chicken broth
    1 Tbsp. tomato paste
    1 to 2 cloves garlic
    1 tsp. dried Italian seasoning
    salt and ground pepper to taste
Preparation
    Remove and discard visible fat from chicken.
    Cut meat into 1 1/2-inch cubes and reserve.
    Heat oil in large nonstick skillet over medium-high heat.
    Add mushrooms and saute until lightly browned.
    Remove with slotted spoon and set aside.
