Julia Child'S Sweet Onion Quiche - cooking recipe
Ingredients

3 c. thinly sliced sweet onions
1 Tbsp. olive oil
2 Tbsp. butter
2 Tbsp. mince shallots or scallions
salt
freshly ground pepper
nutmeg
3 large eggs, blended with enough milk or cream to make 1 1/2 c. liquid
1/4 c. lightly pressed down grated cheese
1 (9-inch) prebaked pie shell
Preparation

Preheat oven to 375\u00b0.
Heat olive oil in a large saute pan. Saute sliced onions until soft, but not browned.
In a separate pan, heat butter and saute shallots briefly.
Add to onions and continue cooking until the mixture is tender.
Season with salt, pepper and nutmeg; let cool.
