Chicken Pie With Sweet Potato Crust - cooking recipe

3 c. diced cooked chicken
1 c. sliced cooked carrots
6 small white onions, quartered and cooked
1 Tbsp. chopped parsley
1 c. milk
3 Tbsp. flour
1 c. chicken broth
salt and pepper to taste
Preparation

Layer first 4 ingredients into a greased 2 1/2-quart casserole.
Combine flour and a small amount of milk in saucepan, blending until smooth.
Gradually stir in remaining milk and chicken broth.
Place over low heat.
Cook until thickened, stirring constantly.
Add salt and pepper.
Pour sauce over chicken and vegetables in the casserole.
Cover mixture with sweet potato crust and bake at 350\u00b0 about 45 minutes.
Yield: 6 to 8 servings.
